Inspector's notes

**2ND CONSECUTIVE VIOLATION** Observed several milk products such as 2% milk and half and half sitting at room temperature with internal temperatures of 55-60*F when measured with a probe thermometer. According to person in charge, milks had been left out for about 30 minutes. All TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 41*F and below to prevent pathogen growth. All milk products were moved to the back of the walk-in to cool at time of inspection. Corrective Action: Corrected at time of inspection.

All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed importance of keeping all cold TCS foods below 41*f when using temperature for food safety.
