Trained employee on when handwashing is required when switching tasks or handling food contact surfaces. Employee washed hands for 20 seconds at time of inspection.

Inspector's notes

Observed whipped cream in canisters with an internal temperature of 49-50*f in reach-in cooler. Trough observation, it was determined that employees are not refrigerating canisters prior to filling with whipped cream. Discussed importance of proper handling of canisters to ensure temperature of whipped cream remains below 41*F. Also observed milk gallon with an internal temperature of 44*F in reach-in cooler. Discussed importance of maintaining milk in reach-in coolers when not in use, and ensuring door is properly closed at all times. All cold held TCS foods must be at or below 41*f at all times. Reach-in cooler had an ambient air temperature of 39*F at time of inspection.

Inspector's notes

Observed milk and half and half in prep table with an internal temperature of 45*f, using a probing thermometer. TCS foods were placed under ice to rapidly chill. Prep table was holding ambient air temperature of 44*F at time of inspection. It was later determined that the thermostat knob setting was lower than usual and PIC made adjustment to temperature settings. Prep table was holding ambient air temperature of 41*F by end of inspection. In addition, Service ticket was submitted. Corrective Action: Corrected at time of inspection.
