Repeat Violation Observed sealed raw bacon and eggs stored above RTE milk, water, and produce. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PIC had the eggs and bacon moved to the lowest shelf at the time of inspection. *Fourth repeat violation* 3-302.11 (A3-8) - Core: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; General Food Protection. No active contamination was observed. Discussed separating raw animal proteins from RTE eat foods to prevent cross contamination.
