In the upper section of the open top prep refrigerators observed chopped cabbage (slaw) mix/47°F, tomatillo salsa/47°F, Mexican cheese blend/51°F, asadero cheese/55°F, and Romesco sauce/50°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. According to the PIC all TCS foods were placed in the units less than 4 hours.

Meatballs measured 109*F with inspector probe thermometer, marinara measured 112*F, chili verde measured 114*F, and cheese sauce measured 116*F. Chef stated that the products had been there for approximately 30 minutes. Chef had staff reheat back to 165*F at time of inspection.
