#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed internal temperature of sliced pepperoni, sliced salami, roast beef, tuna, and pre-cooked chicken at 52°F inside prep cooler at front of establishment, per probe thermometer. Per Person in Charge (PIC), ice began to form on containers and food items just before time of inspection. PIC stated that prep cooler was turned off to defrost 10 minutes before time of inspection. Ambient air temperature of prep cooler measured at 71°F, per min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC had all listed TCS foods improperly cold held relocated to functioning walk-in unit to rapidly cool to 41°F at time of inspection. Discussed proper defrosting procedure with PIC. Corrective Action: Corrected at time of inspection.

Observed condensation dripping from vent in walk in refrigeration unit as well as freezer. Establishment had trays in place to catch the falling condensate to prevent contamination to food. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Correct prior to next routine inspection.
