Instructed cook and other staff to utilize the 3-compartment sink for washing, rinsing, and sanitizing until repairs are made to the unit. Discussed the following topics/requirements with the head cook: 1) Utilizing quaternary ammonia based sanitizer test strips at the 3-compartment sink to verify proper sanitizer concentrations 2) Utilizing probing thermometers to monitor internal cook/holding temperatures of perishable food items

At the time of inspection, there was no Certified Food Protection Manager on site. Per head cook, he was previously certified but his certification has expired. In addition, the supervisor on site is certified, but was not present at the time of inspection. The establishment shall have a Certified Food Protection Manager on site during all operating hours. Corrective Action: Correct prior to next routine inspection. *4th consecutive violation

Cooked chicken with a date mark of 11/6 (8 days past discard date), chorizo with a date mark of 11/10 (4 days past discard date), cooked pork with a date mark of 11/10 (4 days past discard date), cooked onions with a date mark of 11/10 (4 days past discard date) were cold holding cooler units in the kitchen. Spoke with kitchen associate and items were discarded at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

PIC discarded items at time of inspection. Discussed date marking procedures with the PIC. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection.
