In service case, observed packages of beef jerky prepared in the facility, datemarked 1/22/26 and 1/28/26, and held for more than 7 days. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Processes and datemarking were reviewed with the PIC. The jerky past 7 days of preparation was discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
