Discussed with PIC why establishment had ten separate quaternary sanitizer test strips, six of which were unopened. PIC stated they over-ordered.

Inspector's notes

Observed multiple TCS products (such as orange juice and packaged sandwiches) in the single standing refrigerator in the back room with internal temperatures between 48°F-50°F at the time of inspection. The ambient air temperature of this unit was 51.7°F and the temperature had not been verified to be less than 41°F within the last 4 hours. Discussed temperature monitoring procedures and frequency. Refrigeration is adequate. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
