Inspector's notes

Observed crab on prep counter for preparing rolls at 47-48*F. Colf hold of food to be 41*F or lower. As per the person in charge, crab was on counter for more than 30 minutes. Crab was placed in walk in cooler to cool to 41*F. Advised staff to return food to walk in cooler or prep cooler as soom as employees are through. Observed tuna in prep cooler at 44*F. As per the person in charge tuna was transferred to smaller container prior to inspection. Tuna was placed into walk in cooler to cool back to 41*F. Corrective Action: Corrected at time of inspection.

Observed spicy crab at prep counter at 45*F-50*F. As per the person in charge, the ingredient was previously used to prepare product prior to inspection starting. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
