Inspector's notes

Observed a plastic bin containing Time Temperature Control for Safety (TCS) foods (whipped cream and cold foam (70°F)) on the counter of the drink station. The plastic bin containing TCS foods was sitting in a secondary plastic container with ice at the bottom, creating an air gap that prevented proper thermal conduction. Discussed proper ice bath procedures with the PIC, noting that foods must be submerged to the product level in an ice-water slurry to maintain cold holding at or below 41°F. As a corrective action, all items were relocated to a nearby cold holding unit during the inspection. Corrective Action: Corrected at time of inspection.

Observed portioned pre cooked chicken in large 5 gallon plastic container in walk in cooler more than 4 inches deep at 50*F. As per documentation on container chicken had been portioned by staff earlier in day Approximately 10:00am. Food items must be cooled back to 41*F rapidly.
