Observed small reach-in fridge next to the pizza line holding marinara, shredded cheeses, and meatballs 45-48*f degrees. Per owner all items out of temp less than 4 hours and moved to walk-in fridge to cool. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed bechamel sauce, cooked chicken, garlic cream sauce, spinach artichoke dip, berry compote, and cooked brussels sprouts with temperatures ranging from 48-56*F in the leftmost cold holding unit at the line. Ambient air temperature taken of the unit with a min/max thermometer was 48-49*F. Per PIC the food had been in there since opening at 11am and potentially overnight. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Proper cooling methods consist of leaving the food uncovered, in shallow pans of 4 inches or less, and into the walk-in cooler to rapidly cool. PIC placed the food into the walk-in.
