Inspector's notes
Observed the small reach in cooler located next to the stove containing unidentifiable foods being adulterated with green/white/black organic matter and pest. PIC states these foods would have been ingredients for their breakfast tacos and state the kitchen had not been used for the past couple weeks. Establishment is not able to dispose of their food at the time of inspection due to being low staffed. All food must be in good condition, safe, and unadulterated. All adulterated food shall not be used and must be discarded prior to reinspection which will occur within 3 days. Corrective Action: Correct prior to re-inspection.

Inspector's notes
Throughout the establishment, observed opened sour cream, opened tofu, opened cream cheese, opened vegan cheese, and opened soy chorizo not having any date marking. PIC states they are unsure when these foods were opened and will voluntarily dispose of these foods but can not at the time of inspection due to staffing issues. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods not date marked must be discarded prior to reinspection. Reinspection will occur within 3 days. Corrective Action: Correct prior to re-inspection.

All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
