Observed 0 ppm Quat sanitizer in the 3-compartment sink in the back of house. Quat sanitizer should be between 200-400 ppm to ensure the dishes are properly sanitized. The PIC will utilize bleach in the meantime. In person reinspection for the 3-compartment sink sanitizer will be on Friday, May 16th. Corrective Action: Correct prior to re-inspection.

Observed another pan of raw ground wagyu beef meat balls stored on a pan of whole intact steaks. All raw foods must be stored under ready to eat foods. All raw proteins must be stored according to their minimum cook temperatures with the higher cook temperature on the bottom. Manager moved all foods to proper storage.
