Inspector's notes

Observed tongs used for raw chicken and raw beef stored in same pan in cooler, with tong tips touching handles (raw chicken tong tips touching raw beef tong handle and raw beef tong tips touching raw chicken tong handle). Person in charge removed utensils to wash, rinse and sanitize. Discussed storing of in use utensils in a manner to avoid cross contamination.

If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection.
