At time of inspection, min/max thermometer reached 165°F after a few tries. Dishwasher was not being used at time of inspection. Discussed cleaning frequencies for items coming in contact with TCS foods. Food contact surfaces touching TCS foods need to be cleaned and sanitized every four hours.
