Manger said they are doing dishes by hand until the repair is made. 3 compartment sink was set at 200 ppm quat. Ensure that all bleach dishwashers are set at 50-100 ppm bleach. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed tomatoes at 52F inside the walkin. Product had the date from 3.5 hours ago. Manager thought that there was a rush, and the employees left it on the countertop after cutting the tomatoes before they put it in the walkin. Walkin temeprature was 36F. Manager embargoed the food products. Ensure that room temperature tomatoes that are cut, are brought down to below 41F within 4 hours and kept in the fridges, and not left on the counter.
