Establishment is currently permitted as a Class 3 Eating & Drinking permit and cooks, cools, and reheats several types of meat as well as beans and rice. Establishment also serves ceviche prepared with shrimp marinated in lime juice. Will follow up about possible change to a Class 4 Eating & Drinking permit due to advanced preparation processes for more than 2 TCS food items. Of note: please replace accordion-style flexible PVC at hand sink in crepe bar area with durable, rigid, straight PVC. Hand soap and paper towels must be provided at this hand sink at all times.

Inspector's notes

Observed a bag of precooked french fry style potatoes in a refrigerated drawer with an internal temperature of 55 degrees Fahrenheit. The drawer was measured with an ambient air temperature of 54F with min-max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), fries were placed in unit the night before, more than 4 hours prior to inspection. PIC discarded fries to correct - see embargo form. This unit is not critical to establishment's cold-holding capacity or food flow. Corrective Action: Corrected at time of inspection.

PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw shrimp used for ceviche being prepared on-site at time of inspection. PIC was unable to demonstrate a parasite destruction letter from 2025. Parasite destruction letter on-site was dated January 2023. Parasite destruction records or letter from supplier are required for all non-exempt fish served raw or undercooked at establishment. Must provide parasite destruction letter from supplier prior to re-inspection. A reinspection will occur on 3/18/2025 to verify the correction. Corrective Action: Correct prior to re-inspection.
