Sliding door display cooler had accumulation of debris on handles of several doors and on plastic trays inside of display case. Brought to attention of department staff to have cleaned more frequently. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Two identification tags found for bags of clams in found in display case. • Shellstock tags or labels shall remain attached to the container in which the Shellstock are received until the container is empty • The date when the last Shellstock from container is sold or served shall be recorded on the tag or label • Maintain and retain tags for 90 calendar days from date recorded on tag or label using an approved record keeping system that keeps records in a chronological order After speaking with PIC and food employee, it was determined that an older bag of clams was stored with fresher clams. The older clams were removed from the display case. Assure identification tags accompany correct bags of clams. It was determined that further training was needed.
