Inspector's notes

Observed several walk-in freezers throughout establishment with a heavy accumulation of ice build-up along the walls and ceilings near the condenser unit. Discussed routine maintenance for walk-in coolers with PIC. PIC stated that they have a work order submitted to address the issue at time of inspection. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed RTE food items (cold cut ham, turkey ham and chicken-pork patty) measured 50-54'F in reach-in unit located behind meat market display case. PIC stated food has been stocked for longer than 4 hours. Ambient temperature of unit observed at 49.8'F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Reach-in unit was emptied at time of inspection and PIC agreed to not use unit until it has been fixed. Establishment observed to have more than adequate coldholding capacities. Corrective Action: Corrected at time of inspection.
