Observed clams and mussels in the display case in the meat department, the mussels had a tag and the clams did not. Per employee and manager, the clams came in fresh today and did not have a tag with them. Tags must be present with the shellfish to properly identify them via harvester number, location, type etc. The manager had the clams removed. Inspector trained staff on: if shellfish are received without tags to send them back and not sell them unless the purveyor can provide the tag, as well as how to store shellfish tags: Shellstock tags or labels shall remain attached to the container in which the Shellstock are received until the container is empty. The date when the last Shellstock from the container is sold or served shall be recorded on the tag or label. Maintain and retain tags for 90 calendar days from date recorded on tag or label using an approved record keeping system that keeps records in a chronological order. Ensure Shellstock from one tagged or labeled container are not commingled with Shellstock from another container with different certification numbers, different harvest dates, or different growing areas.
