#22 — Proper Cold Holding TemperaturesPriority3-501.16

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.......In refrigerated pastry case/51F, observed cream puffs/49-53F and cannoli/50F. Maintain cold TCS food at or below 41F. The case was observed warmer on the end where these items were stored. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown, which resulted in the violation. The manager voluntarily discarded the cannolis and cream puffs, immediately scheduled repair service for the case, and will retrain staff as needed. Correct By: Corrected At Time Of Inspection

This address holds 4 food permits

Maricopa County issues a separate permit for each kitchen rather than for each restaurant name, so large properties hold several. Each is inspected and scored on its own. The county does not publish which kitchen serves which venue.
