observed at the deli front sanwich station, some pans of deli meats overfilled. cut turkey, sliced ham, roast at 49-51 degf . discussed the proper cold holding temperatures with deli staff. manager removed excess food, use of food pan lids suggested. manager placed lids on each deli meats. please ensure rte/tcs is kept at 41 deg f or cooler. also in the outdoor grilling area refrigerator, noted some cooked sausage, dated 4-28 at 56 deg f . showed manager on duty. manager removed food. please monitor cold holding for the tcs foods.
