Establishment was observed to be operating outside the scope of their permit. Observed food processing performed in order to prepare cut TCS fruits for retail sale. Observed a 3-comp sink, fruit wash, and food preparation area in the back room of the produce section. Discussed with management that the permit will be changed from a Class 2 to a Class 3 to better reflect the food processes and associated risk factors. Discussed potentially replacing the seal in the dairy walk-in cooler.
