Supervisor adjusted the temperature on the hot holding unit so that the ambient air temperature of the unit measured above 135°F. Advised employee to periodically check the internal temperature of the unit to ensure food stored within is the appropriate temperature. Reviewed hot holding requirements with the person in charge.
