Discussed removing materials or equipment not needed in the establishment, the use of designated areas for storage of materials such as personal items to protect food and utensils from contamination. Discussed repairs to leak under the three compartment sink, sealing of gaps/holes in the walls, and maintaining items in good repair. Discussed the use of designated utensils and food contact surfaces for the preparation of raw ready to eat seafood to prevent incidental crosscontamination with preparation of ready to eat items at the prep line.

Explained to PIC that all food for sale at the establishment must be obtained from an approved source as defined by law. All food from unapproved source was voluntarily discarded at time of inspection. Corrective Action: Corrected at time of inspection.
