Also observed dust on hood vents, food splatter inside microwave, and splatter on outside of flour containers. Discussed conducting a deep clean with manager and implementing a regular cleaning schedule to help prevent attraction of pests. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Discussed keeping all cold-held TCS food items in properly working prep coolers or walk-in cooler until unit has been serviced and maintains an ambient air temperature 41°F.
