Observed milk, salami and cheese packs, yogurt, and prepackaged sandwiches containing cheese and deli meats for retail sale in reach-in cooler at 52 °F. Observed minimum air temperature of 51 °F in cooler as measured with min/max holding thermometer. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Foods had been in cooler for more than four hours as per person in charge. All TCS foods improperly cold held were discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Must repair cooler prior to reinspection. Corrective Action: Correct prior to re-inspection on Friday, 7/31.

TCS food items included milk (45F -49F), deli meat sandwiches (50F -54F), cheese and meat deli snacks (50F -54F), yogurt (48F-52F), and tofu (54F-56F). The person in charge stated the food items had been stocked into the reach in cooler for cold holding the night before, more than 4 hours ago. The food items were embargoed at the time of inspection.
