Repeat violation. This is the second consecutive violation.Observed several live German cockroaches throughout bakery kitchen. Several cockroaches were found in glue traps and in crawling on cardboard boxes. Discussed general cleaning practices to eliminate pests. PIC, provided pest control records indicating service was completed on 7.13.24 to treat for German and sewer roaches. Facility is scheduled for a bi monthly service and recommended changing it to weekly services until pest activity subsides. Pre-defined Comment: Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist before re-inspection on 8.2.24Corrective Action: Correct prior to re-inspection.

Observed open bag of raw pork stored on bakery wood countertop thawing with an internal temperature of 83*f. According to PIC, pork had been previously slacked in water prior to storing at room temperature. Discussed importance of cold storage of TCS foods to ensure temperature remains below 41*F while thawing and also proper storage of raw meats to prevent cross contamination that could lead to a foodborne illness. PIC discarded pork at time of inspection.
