Inspector's notes
Observed beef jerky held at room temperature in transparent case on top of meat market display case. Per person in charge (PIC), TCS beef is rendered into a shelf stable Non-TCS beef jerky to be held at room temperature and sold over multiple days. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyazenergovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. Beef-jerky made through specialized process was embargoed and recommended for discard. PIC instructed to discontinue specialized process until variance is approved. Establishment must apply for variance or discontinue sale of beef jerky made Non-TCS through specialized process. Corrective Action: Correct prior to re-inspection on 6/10/25.
