Cold holding units used to hold TCS foods must be able to maintain food temperatures at 41F or below. PIC placed the cold holding unit out of service at the time of this inspection and will ask management to call for repair. The cold holding unit must not be used until it is holding TCS foods at 41F or below. Will reinspect within 10 days. Proof of repair may be submitted electronically before the 10 days in lieu of an onsite reinspection. Please submit the repair invoice and a picture of a thermometer in the unit showing it is at the proper temperature. Correct By: Correct Prior To Reinspection
