Inspector's notes
Observed boneless wings 127-133*F and bone-in wings 125*F-134*F in hot holding case at the deli. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated chicken wings were made one hour prior. All TCS foods improperly hot held were reheated to 165°F at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed 3 lemon pepper rotisserie chickens in the hot holding area of the retail side of the deli at 110'F at the time of the inspection. Chicken had been here since 1pm (3 and half hours prior). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation.

Inspector's notes
Observed rotisserie chicken in the blast chiller at 70-87'F at the time of the inspection. Per department employee the blast chiller had just finished its chilling cycle and items should be at 41'F. Observed bags of rotisserie chicken still sealed and probes for the blast chiller were not being placed in the cooling food products. Per employee items were above 135'F before going into the chiller and the cycle runs for an hour and a half. Bags were opened and probes were placed in the chickens. Recheck of the chickens after an additional 45 mins showed the chickens between 55-70'F. Ensure bags are opened while the chiller cycle is being utilized to ensure proper cooling parameters are met. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff , which resulted in the violation. Corrective Action: Corrected at time of inspection.
