Upon inspection of the long reach in cooler, observed small lunchables with meats and cheese at 48*F, large lunhcables with meats, cheeses, and salsa at 50*F, snack packs with cheese and salami at 49*F, and cheese sticks at 50*F. All foods had been in the unit for 5+ days. Foods were embargoed. All temperature controlled for safety (TCS) foods in cold holding are to be kept at or below 41*F. Far right side of the reach in cooler was unable to hold 41*F on inspectors min max thermometer. It would occasionally reach 41*f for several minutes but would warm to 46-47*F again. All cold holding equipment used for TCS foods are should be able to hold 41*F or below to ensure the TCS foods in the unit can remain in proper temperature. Until unit is repaired, establishment will utilize other areas of the cooler to hold TCS foods. Correct By: Corrected At Time Of Inspection
