Final construction inspection for the Bakery. Walk through with the Food Safety Director and Superintendent. Construction complete and approved.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Checks and money orders are also accepted via US Mail. If you select payment via US Mail. Pre-final walk through of the Bakery area. The following items were discussed:1). Stainless caps will be siliconed in. File off sharp corners 2). Proofers and ovens will be flashed off at the wall junctures east and west and at the top3). Provide backflow protection for the following equipment pieces connected to the water supply.i). Reduced Pressure Principle Backflow Valve (RP) or Spill Proof Pressure Vacuum Breaker installed 12 inches above the highest point downstream for the Sanitation Station (Not defined in plan).4). Veggie sink sanitizer dispenser will require an air gap in the backflow housing part of the eductor.5). Run the water line and chemical line through the sink to the sources and not above. Drill a hole through the stainless.6). Touch up the silicone on the three compartment sink.7). Provide missing drain grate under the prep sink.8). Install cleanout cover over the clean out to the side of bakery freezer.9). Doorway to storage area is missing an impact door.10). Back of the bakery, one drain line does not line up with the floor sink, one of the water heater drain pan drains. most likely or condensate.11). Spill Proof Pressure Vacuum Beaker will be installed upstream of the spray down proportioner. Install 12" above the dispenser.12). First walk through of the bakery area. The following items were discussed:1). General note: Drain lines may not run unnecessarily exposed, shall be rigid, properly braced, where needed run along the wall, maintaining gravity flow and a 1-inch air gap at the floor sink. Drain lines shall be installed so that they accommodate cleaning and the provision of storage space as much as possible. Drain lines may not be run over the floor. 2). Proofers and ovens will need to be flashed off at the wall junctures east and west.3). Provide backflow protection for the following equipment pieces connected to the water supply.i). Reduced Pressure Principle Backflow Valve (RP) or Spill Proof Pressure Vacuum Breaker installed 12 inches above the highest point downstream for the Pan Washer # 43 if the unit has a hose attached for cleaning. Not shown in spec sheet. I assume there is none as you can use the Sanitation Station hose to clean the pan washer. As shown in detail 2, P7.1.ii). Reduced Pressure Principle Backflow Valve (RP) or Spill Proof Pressure Vacuum Breaker installed 12 inches above the highest point downstream for the Sanitation Station (Not defined in plan).iii). Double Check valve on the water supply line #32, page P1.2, to the proofer and ovens. Install in an accessible location between 12" and 5' from the floor.Install RP valves with hub drain assembly and note that testable valve(s) will need to be tested and certified before final inspection.4). I assume that the pan washer has some type of chilling system that classifies this unit as low temperature, not needing a steam hood as there is no steam hood installed. If that is not true than omit the unit or install a steam hood to capture moisture and heat.No County legal action will result from this inspection.E-mailed report to superintendent.
