Observed premade salads being cooled in small display cold holding unit with an ambient temperature of 42*F. All cooling foods should be placed in unit designed to cool. Manager placed all salads in nearby large reach in refrigerator for proper cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Plumbing cleanout below hand wash station in dough room missing its cover and allowing flour into the inner wall. Caulking at dough room hand sink eroded. Caulking at hand sink nearest ware wash station is beginning to crack, may need replacement soon also. Cleanout below ware wash station has spacing around it that should be filled in or covered to protect the inner wall. Please repair these areas to provide smooth and easily cleanable surfaces. Corrective Action: Correct prior to next routine inspection.
