PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - PIC stated time is being used as a control for whipped cream near drive-thru window and no written policy stating so is available. The whipped cream is currently being removed from cold holding at 41*F or below and being placed in a small pan. That pan is then placed atop another pan that has ice in it. The ice chilled pan is intended to keep the whipped cream cold but the whipped cream had an internal temperature of 62*F during the inspection. The whipped cream is also marked to be discarded within 3 hours upon being removed from cold holding initially. If time as a control is to be used, please write up a policy for your TCS food items that are using time as a control. The whipped cream was discarded at 3:00 PM.
