Discussed repairs made to HVAC system and how warmer than usual temperatures may impact the ambient air temperature of coolers. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding: Adobo chicken (44 Deg. F) and seasoned steak (45 Deg. F) in cooler across from grill probed with internal temperatures above 41 Deg. F, per probe thermometer. Meats were moved from cooler to walk-in cooler and placed in ice bath for rapid cooling to 41 Deg. F by end of inspection. Ambient air temperature of cooler was 40.8 Deg. F, per min/max thermometer. Ensure all cold held foods are held at or below 41 Deg. F during storage of TCS-foods.
