Observed steak in the hot holding warmer at 95-125F. Talked to staff, and the product was removed from the grill 35 minutes ago, and on the line 5 minutes ago. Manager reheated the product to 165F during service. Ensure that hot holding of TCS foods are kept at 135F and above at all times. Corrective Action: Corrected at time of inspection.

Observed employee drop item on the ground, proceeded to remove the gloves, add hand sanitizer to hands, then put on new gloves. Talked to manager about handwashing, and hand employee immediately wash hands. Ensure that handwashing occurs going from dirty to clean tasks. Corrective Action: Corrected at time of inspection.
