Observed bar dishwasher dispensing 0 ppm of chlorine sanitizer in final rinse cycle when tested with a test strip. All chemical dishwashers must dispense 50-100 ppm of chlorine in final rinse to ensure sanitization of food contact surfaces. Bar dishes will be sent to the back of house dishwasher until bar dishwasher is fixed. A work order was placed at time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw chicken in drawer on the line with internal temperatures ranging from 47*F-54*F when measured with a probe thermometer. According to chef, drawer had been left cracked open for a short period of time. All TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 41*F and below. **2nd repeat violation** Observed several items in reach-in drawers on cook line such as sandwiches containing deli meat and cooked salmon with internal temperatures ranging from 47-50*F when measured with a probe thermometer. According to kitchen manager, these items had been prepped earlier in the day. Discussed cooling prepped items in the walk-in to 41*F and below before placing in reach-in units. Reach-ins do not have proper capacity to cool foods down after being prepped. Discussed utilizing freezer for faster cooling. Items were moved to walk-in at time of inspection. Corrective Action: Corrected at time of inspection.

Technician was contacted to repair dishwasher as sanitizer bottle was full and connected to dishwasher. Dishwashers must dispense chlorine sanitizer at a concentration of 50-100 ppm. Until dishwasher is fixed, all bar dishes will be redirected to the back of house dish area. A re-inspection will be conducted on 8/9/23 per manager's request.
