Inspector's notes
Observed rice and queso in the hot holding unit with internal temperatures of 115-125*F when measured with a probe thermometer. All hot TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 135*F and above. According to chef, rice and queso had just been cooked, prepped, and placed in unit. Rice and queso were reheated to 165*F at time of inspection. Corrective Action: Corrected at time of inspection.

Per kitchen manager, pork had been prepped earlier in the day and had been placed in the unit to cool. All prepped foods must be cooled in the walk-in to 41*F or below before being placed in reach-in units. Reach-ins do not have proper capacity to cool foods properly.
