Observed sliced brie cheese in an overfilled container at 48 -50 Deg. F. in the top portion of the prep-refrigerator next to the stove area. Reviewed with staff that all products placed in preparation refrigerators must be at 41 Deg. F. or below prior to placing in the unit, keep product levels no more then 1 inch from the top of the pans, and keep the units covered when not in use to maintain proper temperatures. The excess product was placed in the unit below at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed several flies throughout the kitchen area. Hire a pest control company to conduct an application and provide a receipt of the application by the Re-Inspection. Spoke to the operator regarding assuring that openings are maintained closed when not in use and that fly fans are properly adjusted to keep flies out of the food preparation area. A Re-Inspection will be conducted on 4/23/26. Corrective Action: Correct prior to re-inspection.

Observed cooked mini bell peppers in a reach-in drawer with an internal temperature of 68*F when measured with a probe thermometer. According to cook, peppers were just cooked and placed in the reach-in. Discussed cooling methods and making sure all prepared foods, whether hot or cold, are 41*F and below before being placed in cold holding units. Discussed using thermometers to ensure food is 41*F after cooling. Peppers were moved to walk-in at time of inspection. Corrective Action: Corrected at time of inspection.
