Facility uses time as a public health control to monitor the tomatoes; however, the discard time was not noted at time of inspection. New cut lettuce and tomatoes were replenished at the time without discard times noted. A food service worker also questioned whether to add the older tomatoes to the top of the new batch. Workers were not aware of the location of the written procedures for using time as a control. Provide additional training to staff and ensure the written procedures are on site and available for staff to refer to. Manager advised by phone at time of inspection. Also, the person-in-charge was not able to locate written procedures for using time as a public health control. Discard times were provided to the products. Provide and maintain time control procedures in the facility, and include bacon to the procedures if it is not cooked completely crispy throughout. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources........Per person in charge (PIC) the facility uses time as a control to monitor cut lettuce/42F and tomatoes/43-45F at the service line; however, the discard time was not noted on the lettuce container. Also, observed a worker mix the older batch of lettuce with a new batch of lettuce being supplied. Written time as a control procedures were not available for review. Staff was immediately instructed to remove the older product from the new and to provide a discard time stamp for the older batch. Ensure the cut lettuce being supplied starts at or below 41F. Train staff as needed with time as a public health control. Written time as a control procedures were emailed to inspector at time of inspection. Correct By: Corrected At Time Of Inspection
