Salads with chopped lettuce and cut tomatoes in display cooler with internal temperatures of 50-56*F. PIC and inspector calibrated thermometers during inspection. Ambient temperature of the cooler was 51*F. The salads were in the cooler longer than 4 hours and were discarded. The cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. The establishment's ambient thermometer that was in the cooler appeared to be stuck/broken and displaying a temperature of 41*F despite the higher temperature present in the cooler. Please use calibrated probe thermometers to ensure proper ambient temperatures are being monitored. Cold held TCS food items must be maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

Materials for indoor floor in food service and preparation areas must be of smooth, durable, nonabsorbent and easily cleanable. Cotton Candy machine has a specific outlet type that will need to be provided to the new location or have the flooring around the cotton candy machine changed to meet required flooring characteristics.
