Inspector's notes
Observed an employee on the cook line drop the knob for the stove onto the ground, proceeded to pick it up with gloved hands and put it back on, then grabbed cheese and continue making a dish. Inspector had employee stop to wash hands, the employee then returned with wet gloves. The inspector then asked the employee to throw away their gloves, wash their hands, and wear new gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a meat and tomato-based sauce in the walk-in cooler in 4 5-gallon containers, made previous day with temperatures ranging from 58-63*F. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. The PIC will be retraining their staff on cooling procedures; typically ice wands are used at this establishment. Corrective Action: Corrected at time of inspection.

Observed debris around the south dumpster. Some of the debris behind the dumpster did contain possible belongings of a transient or from a member of the residential housing next door to the complex. The PIC voluntarily cleaned the area at the time of the inspection.

Quat sanitizer is dispensed from wall dispenser and was not properly dispensing at time. PIC switched to chlorine sanitizer and properly set up 3-compartment sink at time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Quat sanitizer utilized by establishment requires 200 ppm-400 ppm. Chlorine sanitizer requires 50-100 ppm. :
