Observed multiple large pitchers of ice cream base (contains milk, cream, and egg) in the table top cooler in the ice cream prep area. Internal temperature of the ice cream base ranged between 52-54*F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 41°F or less. After discussion with the person in charge, it was determined the ice cream base was within safe time parameters. The ice cream base pitchers were moved to the large reach in coolers to rapidly cool.
