Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a gallon of milk with internal temperature as measured using a probe thermometer of 49° F in the milk cooler by the ice cream. Per the person in charge, it was unclear how long the milk had been in the cooler or how long it was out of temperature. Person in charge embargoed the milk. It was observed that the unit had a lot of ice build-up inside. The ambient temperature as measured using a min-max thermometer was holding right around 44°F. Person in charge agreed not to put TCS foods into the refrigerator until it has been fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
