Observed mixed cheese, mozzarella cheese, sliced and diced tomatoes, shredded lettuce, deli ham, and American cheese in the top of the make-line unit ranging from 48*F to 55*F using probe thermometer, verified by person in charge. Person in charge (PIC) stated the items were placed in the unit 75 minutes prior to inspection from the refrigerator next to it. PIC relocated the items to the walk-in to rapid cool. Also, observed cooked rice, cooked sausage links, cooked vegan chicken breast, cooked vegetables, cooked pasta, mashed potatoes, and cooked alfredo sauce in the small make-line unit ranging from 45*F to 52*F using probe thermometer, verified by person in charge. PIC stated the items were in the unit since yesterday and voluntarily discarded - see embargo form. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cut tomatoes and diced sausage links cold holding in an ice bath in the front service counter, with internal temperatures of 46-52F, probe thermometer, verified by PIC. The TCS foods were placed into the ice bath 2 hours prior to inspection. PIC placed the tomatoes and sausage into the upright refrigerator to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. PIC will ensure that an adequate ice bath is prepared for the TCS foods in the cold well and will monitor temperatures. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
