Observed meat and cheese pastries in display case with an internal temperature of 90F, person in charge states that items were cooked an hour ago and the holding case is inoperable at the time. establishment does not use time as control. Person in charge states that pastries will stop being made till hot holding case is operational. Discussed that cooked foods to be either stored hot at above 135F and or under time as control for 4 hours. Person in charge to discard items after 4 hours has passed. Corrective Action: Corrected at time of inspection.
