The establishment was filleting fish at the time of inspection. The establishment is operating beyond what is allowed under a food jobber permit. The person in charge (PIC) stated that fish filleting is not part of their normal operating procedures. This was being done due to a shipment error. The PIC was instructed to stop processing fish unless a food production permit is obtained. The PIC was informed that they cannot process fish with a food jobber permit on 7/30/24 and 9/5/24 and subsequent routine inspections. The PIC stated they are currently looking for a new facility to relocate. County legal action may result from this inspection.

Predefined Comment: No County legal action will result from this inspection.Of note: Reviewed shellfish tags, employee illness/symptoms, proper food separation, and handwashing with the PIC. The establishment was observed re-packaging whole raw fish into boxes and adding ice. The establishment occasionally rinses off fish if needed. Some of the raw fish is removed from boxes and stored in metal sheet pans in the coolers until is it packaged and shipped. Informed the PIC to operate within the guidelines of a food jobber permit as per the Food Advisory Inspection from 7/30/24 or submit for a food processor permit. Instructed the operator to ensure all items in the advisory report from 7/30/24 are completed prior to next routine inspection.
