Suspension has been lifted.Of note: Reviewed reheating procedures for sous vide steak. PIC stated steak is separated into pans and reheated to 140*F. Advised PIC steak reheated from commercially packaged, sealed bags may be reheated to 135*F. Unused portions of steak that are separated and stored under refrigeration in pans should be reheated to 165*F for 15 seconds if reheating for hot holding. A variance is required if deviating from the outline requirements in 2017 FDA Food Code 3-403.11. No steak observed reheating at the time of inspection.

Inspector's notes

Upon arrival, PIC stated they experienced water coming up from the pipes at approximately 2pm so usage of sinks was temporarily halted and an emergency work order was placed. Establishment was open and operating at the time of inspection. Observed customer orders being prepared while nearby floor sinks were filled with with untreated graywater. Observed 10 plus floor drains and floor sinks filled to 1 inch within floor level. Observed an active flow of sewage from the floor sink and floor drain nearest to the cash register after an employee washed their hands. A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health. Advised PIC on proper cleanup procedures after a vomit or fecal event. Corrective Action: Correct at once.
