Observed the wiping cloths being stored in sanitizer bucks with quat sanitizer at 0PPM. Person in charge (PIC) re-made the bucket at time of inspection with concentration of 200PPM. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a small leak under the hand sink near the drive thru, across from the hot-holding line. Also observed a leak at the faucet of the hand sink near the cookline. Person in charge (PIC) opened a ticket for repairs at time of inspection. Both sinks are still operational, and there is an additional sink in the back of house that can be used if needed. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

PIC stated the cabinet is only used to thaw raw chicken and the air temperature is maintained at 38*F for a 24 hour cycle for the cooler is cleaned and sanitized. Advised PIC the placard instructions may require a variance if holding air temperatures above 41*F. Utilizing the cooler at 41*F or below to thaw raw animal proteins will not require a variance.
